Hi Cliff... Cheddar Torta 1 ½ lbs. good quality cheddar cheese, grated or shredded 8 oz. Hellman's real mayonnaise 1 cup chopped pecans ½ cup finely minced onion 2 tsp. cayenne pepper Several dashes hot sauce (Tabasco) Raspberry preserves Let cheese sit in bowl at room temperature until slightly oily Line pan/dish with saran wrap (one with edges to create torta effect) Combine all ingredients except preserves with the cheese and knead together Press cheese into pan and cover with saran wrap Let refrigerate a few hours and invert onto serving dish Spread preserves over top, as much as desired Serve with unflavored crackers. Almond-Poppy Seed Angel Food Cake 1 package (16 ounces) angel food cake mix 2 tablespoons poppy seed 1 ½ teaspoons almond extract, divided 1 ½ cups sifted confectioners sugar 2 tablespoons water ¼ cup sliced almonds Preheat oven to 350 degrees. Prepare cake mix according to package directions, stirring in poppy seed and 1 teaspoon almond extract. Pour into an ungreased 10-inch tube pan. Bake 40 to 45 minutes or until top is golden brown. Invert pan; cool completely. Transfer cake to a serving plate. Combine confectioners sugar, water, and remaining ½ teaspoon almond extract in a small bowl.
